A Few Southern Style Seafood Recipes.

Deviled Crab Casserole

1 lb of crabmeat
1 1/2 cup of bread crumbs
1/2 cup of chopped celery
1/2 cup of chopped onion
1/2 cup of chopped green peppers 1/2 cup of melted butter
1/4 cup of milk
1 tsp. dry mustard
1/2 tsp. of salt 2 tsp. A – 1 sause

Combine all ingredients and pour into greased casserole. Bake at 350′ for up to 30 minutes. Serves 6 people.

Baked Trout-Seafood Sause

1 1/2 lb. of trout, filleted
1 recipe of Hollandise sause
12 boiled shrimp (cleaned and peeled)
1/2 lb. lump crabmeat
1 cup of mushrooms
2 truffles

Bake fish fillets. Add shrimp, crabmeat, truffles and mushrooms to Hollandise sause and serve immediately over hot fish.

Baked Catfish

2 lbs. of catfish fillets
1/2 cup of butter
3 tpsp. of lemon juice
Salt
Pepper
Worcestershire sause

Preheat oven to 350′. Arrange the catfish fillets in pan lined with foil. brush both sides of fish with butter. Sprinkle with salt and pepper. Pour lemon juice and Worcestershire sause over top. Bake 35-40 minutes, basting occasionally.

Grilled Catfish

Blend in blender:
1 cup of onion
1 cup of celery
1 cup of bell pepper
Drain.

Place catfish fillets on foil and cover with the above ingredients. Melt 1 stick of butter/ or oilive oil in 1 small bottle of Italian Dressing. Pour over fish. Place on grill and keep covered at all times. As fish cooks continue to spoon juices over the catfish fillets.
